Polenta Cake with Thyme Honey glaze

 

Simple is delicious

I’m not a huge desert fan, unless it’s custard based, Like an amazing ice cream, irresistible creme brûlée, cheese cake or… well creamy things.  This cake however, is not too sweet and is the perfect finish to a nice meal, or a little accompaniment with an afternoon tea.

Polenta cake with thyme infused honey glaze

Seriously yummy polenta cake-simple and not over-the-top

Ingredients

  • 1 cup all purpose flour unbleached
  • 1/2 cup finely ground polenta quick cooking
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 2 large eggs
  • 2/3 cups sugar
  • 1/2 cup olive oil extra virgin
  • 1/4 cup greek yogurt plain whole milk
  • 1/3 cup whole milk
  • 1 tsp vanilla bean paste or if only extract-1 1/2 tsp extract
  • 1 whole zest of lemon
  • 1 cup honey good quality-best
  • 1 bunch thyme sprigs 1/2 for honey infusion other for decor

Instructions

  1. Preheat oven to 350 F

    Grease a 9-inch springform pan with butter and line bottom with buttered parchement-cut into a circle to fit.

    Mix flour, polenta and baking powder with salt-set aside.

    In a stand mixer with paddle attachement, add eggs and sugar- mix on high speed until light and frothy. This can also be done by hand, if you don't have an electric mixer.

    Add oil, yogurt, milk, vanilla and zest. Mix well till combined. Add flour mixture a bit at a time, till well incorporated, but don't overmix.

    Pour batter to the prepared pan and bake until golden brown and a toothpick comes out clean- about 25 minutes. Transfer to a wire rack. Let cool. Prepare honey glaze. Heat up honey and add 1/2 bunch of thyme- pull from heat and let it infuse... Poke small holes in the cake and pour the honey thyme glaze ontop... add maldon salt for an extra kick.
