I discovered this soup, thanks to my sister! I got to visit her in Peru twice when she lived there. We had amazing food and of course delicious chicken soup.
This is not the exact recipe and maybe not be the real Peruvian way to make it, but my husband and I love it. It’s time consuming, but not difficult-so make a huge batch and freeze it! It’s especially great when I don’t feel like cooking-just pull it out of the freezer, heat it up and have a nice and satisfying meal!
The added zing of lemon and fresh cilantro makes it unique and delicious. For those of you who don’t like cilantro-add some parsley, chives, tarragon, mint, or basil… or if you love herbs… add them all!
Just don’t forget the lemon! Serve this with rice, potatoes, pasta, crusty rustic bread….
