Lemon Grass and Lime Rice

This is an easy recipe… no recipe needed, really!  Basically, choose your rice- I used my favorite Calrose style- rice that is a short grain sushi like rice. I didn’t make my rice on the stove top, but in a rice maker. I added 3 lemon grass stalks to it prior to cooking. You take the stalks out when rice is ready. I love the flavor the lemon grass adds.  When the rice is cooked, add some lime zest and a squeeze of lime, some salt, preferably Maldon salt and a dab of butter- yum!  

My rice making ratio. 1 cup rice to 1.5 cups water. If you are doing it on the stove top, bring rinced rice to a boil, then turn down and simmer with top on for about 12-15 minutes, depending on the amount of rice. So the ratio is 1 rice to 1.5 water, meaning if you have 2 cups of rice you would need 3 cups water. 

1 cup of rice usually is enough for  3 sides.  

Play around with different ingredients to infuse in your rice- cardamon pods are great, fresh thyme sprigs, bay leaves, even a little sachet of garlic, parsley and pepper corns ( sachet is a little bundle tied in cheese cloth). Adding lemon zest and lemon juice to rice is also really nice.
