Super Easy Pasta Dish

Last night I didn’t feel like spending too much time in the kitchen. My husband wanted ribs that I just bought, but it was getting late, so it will be tonight’s meal. I wanted to just heat up left overs, but he wasn’t interested. So we compromised on my easy pasta dish. I’d just done my bi-monthly corona virus, mask and glove shopping so the fridge was stocked. I bought fresh store made ricotta, which really makes a difference, if you can find some. I bought mine at Nino’s

This is really a great spring dish. It would also be great as a cold pasta salad for a picnic, potluck or BBQ. Just choose a different type of pasta shape, like penne, fusilli, mini shells, etc. If you plan to have this as a pasta salad, skip the step to heat the tomatoes and when you strain the pasta and arugula, add a few drizzles of olive oil right away. Then add the ricotta to distribute it evenly… and lastly add the cherry tomatoes. Top with torn basil for garnish.

Quick Tomato, Arugula, Ricotta Pasta dish

Try a super fast way to make pasta with just a few ingredients

Ingredients

  • 2 cups arugula
  • 1 cup fresh ricotta
  • 2 tbsp olive oil
  • 1 tbsp grated parmesan or pecorino
  • anytype of pasta Read box for amount/instruction

Instructions

  1. Get all ingredients prepared-halve the cherry tomatoes, measure arugula and ricotta-ricotta needs to be at room temperature. Also, get a pot of salted water boiling for the pasta.

  2. In a small frying pan, heat up the cherry tomatoes for about 5 mins-just to keep warm

  3. Just when pasta is aldente, add arugula to water and quickly drain pasta and arugula

  4. To a bowl add the ricotta, tomatoes, pasta and arugula mixture. Toss with tongs to break up the ricotta. Add salt and pepper, a bit of grated cheese and a drizzle of olive oil.

Recipe Notes

This is such an easy dish and not to mention, delicious! If you want to add more punch, add a bit of garlic with the tomatoes or add red pepper flakes at the end. I made this last night... We loved it however, it wasn't as hot as I wanted because I didn't heat up the cherry tomatoes which cooled down the pasta, as well as the cold ricotta! But it was still delicious.
