Quick Tomato, Arugula, Ricotta Pasta dish

Try a super fast way to make pasta with just a few ingredients

Ingredients

  • 2 cups arugula
  • 1 cup fresh ricotta
  • 2 tbsp olive oil
  • 1 tbsp grated parmesan or pecorino
  • anytype of pasta Read box for amount/instruction

Instructions

  1. Get all ingredients prepared-halve the cherry tomatoes, measure arugula and ricotta-ricotta needs to be at room temperature. Also, get a pot of salted water boiling for the pasta.

  2. In a small frying pan, heat up the cherry tomatoes for about 5 mins-just to keep warm

  3. Just when pasta is aldente, add arugula to water and quickly drain pasta and arugula

  4. To a bowl add the ricotta, tomatoes, pasta and arugula mixture. Toss with tongs to break up the ricotta. Add salt and pepper, a bit of grated cheese and a drizzle of olive oil.

Recipe Notes

This is such an easy dish and not to mention, delicious! If you want to add more punch, add a bit of garlic with the tomatoes or add red pepper flakes at the end. I made this last night... We loved it however, it wasn't as hot as I wanted because I didn't heat up the cherry tomatoes which cooled down the pasta, as well as the cold ricotta! But it was still delicious.
