Easy Fish Dinner

I just recently put in a big fish order for the first time, online from Sea2table ! I was thrilled to see how well the packages arrived and the portions and quality were great! I quickly placed each in the freezer and dreamed of my next fabulous meals.

I have so many recipes for fish, but they are quite involved and take time. I wanted to make something super easy and healthy!

It’s funny because this fish recipe is one I made for my now husband when we were dating. When we met, he had asked if I knew how to cook fish, weird question, but we did talk about food a lot! At the time, it was prior to my classical French training in culinary school. But, I was confident in the kitchen and was fully prepared to make him a delicious fish dinner. 

So I went to my no-fail, easy fish dish. Well, so I thought…

I was living in an apartment house with 3 other apartments, in Royal Oak, Michigan when I made my first, disastrous fish dinner for my fiancé. I made a fish en papillote, which is just fancy French for saying in it’s pocket/wrapped up. This method is a great way to infuse flavors, keep in moisture and most importantly, it’s easy and uncomplicated!!!

Anyway, the problem was  I forgot that I was storing my Wasa bread crackers in the broiler below the stove, so as the fish was cooking the Wasa bread was burning. The whole apartment filled with smoke and the alarms went off. My neighbors rushed over to see what was going on as smoke billowed down the main apartment house hallways into their apartments. I was completely embarrassed and also a bit sad as our fish was ruined, as it took on the flavor of burnt Wasa bread. We went out for sushi that night! 

Long story short,  this is a no-fail recipe, unless you have something else in the oven that shouldn’t be there 😉 and I’ve made it up to my now husband, with my culinary school talents in the kitchen cooking other fish dishes! But, sometimes you don’t feel like cooking and want to make something simple, yet delicious! 

I served the red fish with left over  zesty zucchini with polenta and when I made the cod dish, I just served it with rice. 

I love this way of cooking fish because you can play around with different vegetables and herbs as well as what to serve it with. Try couscous, quinoa, rice, risotto, polenta… have fun but mainly, just play around and find what flavors you like! Enjoy!

Easy Fish Dish

This is a great way to cook your fish with lovely veggies and aromatics

Ingredients

  • 1.5 lbs Fish- any type-but the cooking time will vary
  • 1 cup sliced leeks-white part
  • 1 cup halved cherry tomatoes
  • 1/2 cup Herbs- whatever you have-parsley, tarragon, chives, dill, chervil, cilantro Depends on your preference
  • 1/4 cup dry white wine
  • 1 tbsp butter
  • Salt and pepper or other sprinkles of spice

Instructions

  1. Pre-heat oven on to 375 f

  2. Saute your leeks slightly, or blanch them by tossing them into boiling salted water for 3 minutes. You just want them to get soft, but keep the shape. If you don't have leeks you can use shallots, onions, mushrooms, zuchini, bell peppers... you can really change things up.

  3. Place all veggies and herbs in a foiled or parchment lined baking dish, with enough foil or parchment to cover. You are basically making a little package for your fish.

  4. Salt and pepper fish and place on top of veggies. Pour the wine in and add pats of butter. Crinkle the bag shut and place in the oven for about 20-30 minutes-depending on fish. We made red fish one night and cod another. To check for fish doneness, you take a fork and check for flakes, meaning you can pull them slightly apart. You don't want it to fall apart! Fish can be eaten on the rare side.

  5. While the fish is cooking, make couscous, rice, or in our case we had left over polenta with the zesty zucchini dish.
