Easy Fish Dish

This is a great way to cook your fish with lovely veggies and aromatics

Ingredients

  • 1.5 lbs Fish- any type-but the cooking time will vary
  • 1 cup sliced leeks-white part
  • 1 cup halved cherry tomatoes
  • 1/2 cup Herbs- whatever you have-parsley, tarragon, chives, dill, chervil, cilantro Depends on your preference
  • 1/4 cup dry white wine
  • 1 tbsp butter
  • Salt and pepper or other sprinkles of spice

Instructions

  1. Pre-heat oven on to 375 f

  2. Saute your leeks slightly, or blanch them by tossing them into boiling salted water for 3 minutes. You just want them to get soft, but keep the shape. If you don't have leeks you can use shallots, onions, mushrooms, zuchini, bell peppers... you can really change things up.

  3. Place all veggies and herbs in a foiled or parchment lined baking dish, with enough foil or parchment to cover. You are basically making a little package for your fish.

  4. Salt and pepper fish and place on top of veggies. Pour the wine in and add pats of butter. Crinkle the bag shut and place in the oven for about 20-30 minutes-depending on fish. We made red fish one night and cod another. To check for fish doneness, you take a fork and check for flakes, meaning you can pull them slightly apart. You don't want it to fall apart! Fish can be eaten on the rare side.

  5. While the fish is cooking, make couscous, rice, or in our case we had left over polenta with the zesty zucchini dish.
