I love this easy tomato sauce. The idea is to get the sweet flavor out of the onion and garlic by infusing it and then discarding after 30 minutes. This may seem wasteful, but the magic of this sauce is in it’s light, perfumed taste. If you were to keep the garlic and onions in, it would be a different sauce. This is a very easy recipe with only 5 ingredients with so many uses–try the sauce for bruschetta, pasta sauce, pizza sauce, it’s so good, you could even call it tomato soup! This recipe can be “veganized” by omitting the butter and using vegan butter or simply adding olive oil. If using vegan butter, use the same amount, if using olive oil omit 2 tablespoons, meaning 6 tablespoons total.
We usually make 3 times the recipe and freeze the rest. In the summer we use fresh tomatoes, which give it a paler look than canned, but the taste is beyond scrumptious. In the winter, if we’re not using our tomato preserves we use san Marzano tomatoes in a can.

Simple Summer Sauce
This is a delicious tomato sauce that can be made with fresh tomatoes in the summer or canned in the winter
Ingredients
- 8 tbsp unsalted butter high quality European-style is best
- 2 yellow onions peeled and quartered
- 6 large garlic cloves
- 3 lbs whole tomatoes 32 oz can-if not fresh
Instructions

In a large pot over medium heat, melt 4 tbsp butter and add the onions and garlic to carmelize

After 10 minutes add the tomatoes and reduce the heat to low- cover and let simmer for 30 minutes

Remove from heat and discard the onions and garlic-use tongs or strainer to get all. This seems waistful, but you've already infused the sweetness needed for this delicious sauce

Use a stick blender, food mill or blender to puree the tomatoes.

Bring back up to a simmer and cook uncovered for 30 minutes- add remaining 4 tbsp butter. Salt and pepper to taste.

I usually make 3xs the amount and then freeze in portion sizes. This is also excelent as pizza sauce-just add chopped oregano/ or 1 tbsp dried to 2 cups sauce along with one chopped garlic clove.
