This is a delicious tomato sauce that can be made with fresh tomatoes in the summer or canned in the winter
In a large pot over medium heat, melt 4 tbsp butter and add the onions and garlic to carmelize
After 10 minutes add the tomatoes and reduce the heat to low- cover and let simmer for 30 minutes
Remove from heat and discard the onions and garlic-use tongs or strainer to get all. This seems waistful, but you've already infused the sweetness needed for this delicious sauce
Use a stick blender, food mill or blender to puree the tomatoes.
Bring back up to a simmer and cook uncovered for 30 minutes- add remaining 4 tbsp butter. Salt and pepper to taste.
I usually make 3xs the amount and then freeze in portion sizes. This is also excelent as pizza sauce-just add chopped oregano/ or 1 tbsp dried to 2 cups sauce along with one chopped garlic clove.
