Simple Summer Sauce

This is a delicious tomato sauce that can be made with fresh tomatoes in the summer or canned in the winter

Ingredients

  • 8 tbsp unsalted butter high quality European-style is best
  • 2 yellow onions peeled and quartered
  • 6 large garlic cloves
  • 3 lbs whole tomatoes 32 oz can-if not fresh

Instructions

  1. In a large pot over medium heat, melt 4 tbsp butter and add the onions and garlic to carmelize

  2. After 10 minutes add the tomatoes and reduce the heat to low- cover and let simmer for 30 minutes

  3. Remove from heat and discard the onions and garlic-use tongs or strainer to get all. This seems waistful, but you've already infused the sweetness needed for this delicious sauce

  4. Use a stick blender, food mill or blender to puree the tomatoes.

  5. Bring back up to a simmer and cook uncovered for 30 minutes- add remaining 4 tbsp butter. Salt and pepper to taste.

  6. I usually make 3xs the amount and then freeze in portion sizes. This is also excelent as pizza sauce-just add chopped oregano/ or 1 tbsp dried to 2 cups sauce along with one chopped garlic clove.
