Coconut Lime Sorbet

This is a delicious desert that is also vegan!

If it wasn’t for my cuisinart ice cream maker, we’d be missing out. I bought it about 17 years ago and have never had an issue with it! If I could buy the upgraded version, this is the one I would want! I love ice cream and love making all different kinds. I recently tried to make something that would work with different diets. This simple coconut lime sorbet works for most, as it’s perfect for Vegans…. yet there’s nothing missing for the non-vegan. Serve with berries, plain or add a splash of liquor-like st Germain, grand marnier, or any other fruit inspired alcohol or even vodka or tequilla and turn it into an adult float! Enjoy!

Coconut Lime Sorbet

Easy, yummy and vegan!

Ingredients

  • 3 cups Unsweetened coconut milk
  • 1 cup sugar
  • 1/8 tsp sea salt
  • 2 tbsp lime zest
  • 1/2 cup lime juice

Instructions

  1. To a medium saucepan set coconut milk and sugar on medium heat, until sugar disolves. Take off flame and add lime juice and zest. Transfer to an ice bath and let cool before adding to ice cream maker. Let churn till sorbet consistency- 20 minutes or more.
